Early Morning Yoga & Easy Meal Ideas

Good morning my friends!

I’m proud of myself – I dragged myself out of bed for a 6 a.m. yoga class today. Getting up early reaaaaally sucks, but once I’m up and out it’s always SO worth it. The hard part is just reminding yourself of that when you’re still in bed. 🙂 After vacation last week, I’ve been working hard on getting back into my workout routine – so far I’m 3 for 3 this week with early a.m. workouts! Yay.

IMG_2572Apparently I was too tired to zip up my bag…

I was originally planning to hit CrossFit this morning but I’m a big fan of intuitive exercising as well as intuitive eating, and I was feeling like I needed something more restorative today. Yoga it was! I signed up online last night so I had less opportunity to bail, and hit up my standard fave, Edge Yoga, for the class. I hadn’t had the instructor that was teaching this morning before – it’s always fun to mix it up, but I definitely still like Mark and Rebecca’s classes best. 🙂

I had an early AnneTheRD client today so I raced home, had some Perfect Microwave Banana Oatmeal (I threw an egg into the mix for extra protein – just follow the same recipe but whisk in an egg before microwaving) topped with berries and walnuts (added after the photo), and was on my way. Also, coffee, obviously. 🙂

On the dinner front this week, last night I threw together one of my favorite random easy dinners. All you do is toss some chicken and tomato sauce in a pan, add any veggies you have around, and put a lid on. Simmer on medium high until the chicken is cooked through!

For this week’s variation, I used boneless/skinless chicken thighs, and on the veggie front tossed in some zucchini, red pepper, and cherry tomatoes. I served it with some crusty bread on the side and it ended up being really good! Easy and tasty FTW. Matt and I both enjoyed it. It also would have been good over pasta or rice!

For dessert, watermelon! We brought home a HUGE watermelon from the beach and I spent some time yesterday cutting the whole thing up. It’s so good! Love summer watermelon.

    Way to listen to your body and do the workout you needed! Watermelon is my favorite summertime "dessert." It's so perfect on hot days!

      This time we actually used leftover homemade tomato soup that Matt made us (delicious), but I normally just use canned tomato sauce - the whole can, yes!

    I love easy meals. I'm not eating a lot of chicken these days but the tomato sauce would be great with fish I think! Thanks for sharing!

    I love easy meal ideas! I have sautéed chicken with tomato sauce before, and it was delicious! I'm definitely trying your oatmeal recipe!

    mmm your food looks lovely. that chicken dish looks so easy and the sort of thing i would enjoy. Do you use a sauce in a jar or plain tomatoes?

      This time we used a tomato sauce that was made from fresh tomatoes, but I usually just use canned tomato sauce - I like the Muir Glen organic basil & garlic tomato sauce in the can.

    I had same breakfast this morning after my quick run! It was delicious! Thanks for sharing the recipe! I was also thinking how I could add more protein to the oatmeal (especially after workout) and thought adding non-flavor whey protein or hemp protein powder... but egg sounds better! Does the taste of the oatmeal change by adding an egg?

      Adding an egg makes it a little bit more fluffy and you can taste the egg a little - it's almost more like a custard.
