Anyone else really loving mushrooms lately? I’ve shared a lot of tasty and healthy mushroom recipes on this blog over the years, so I wanted to put them all in one place! 

From soups to veggie enchiladas to breakfast tacos and more, you’ll love these breakfast and dinner ideas.

Tasty Recipes with Mushrooms

I’m a big fan of mushrooms – portobellos, shitakes, white mushrooms, you name it. Besides being my favorite pizza topping (well, tied with pepperoni), they are also a favorite of mine to use in recipes!

Mushrooms are meaty and tasty, and add delicious flavor to any dish. They’re popular in vegan and vegetarian meals, but I’ve also included some dishes with meat below, too, so there’s a nice variety. 🙂

And now, on to the healthy mushroom recipes!

Stuffed Portobello Mushrooms

These stuffed portobello mushrooms are piled high with a flavorful and nutritious vegetarian filling: feta, white beans, spinach, artichokes, sun dried tomatoes, and even more goodness.

This is an old favorite vegetarian meal of ours – I published it for the first time way back in 2010, and it has since gotten a revamp with new photos and a little tweaking to make it even more awesome!

Instant Pot Farro Risotto

This creamy farro risotto is made in the Instant Pot for a quick, healthy meal everyone will love!

It’s vegetarian and packed with spring veggies like peas, asparagus, and mushrooms, and topped with parmesan.

Goat Cheese Veggie Frittata

The combination of creamy goat cheese, mushrooms, and spinach in this frittata are totally crave-worthy! It’s an easy brunch recipe that also looks fancy.

I LOVE mushrooms with eggs – such a good combo!

With sauteed mushrooms, arugula, sliced avocado, and a fried egg on top, this is the ultimate filling and comforting breakfast bowl.

    Love mushrooms! Sauteed with a little sherry is a nice accompaniment for steak, but these all sound good too!

    I love all of the variety and flavors in these dishes! Mushrooms are versatile and so delicious. I love them dipped in ranch or hummus, stuffed, added to our meat-based dishes, and so many more meals. Thank you for compiling this post of recipes!
