Microwave Pumpkin Oatmeal Cookie for one

I have a fun new recipe for you guys this morning! Introducing: a microwave Pumpkin Oatmeal Cookie for one! It’s vegan, too.

This healthy, soft, and chewy “cookie” is packed with fiber and healthy fat, making it a great breakfast or snack, and it couldn’t be easier to make – all you need is the microwave!


I was in the mood for something pumpkin-y for breakfast yesterday; I originally considered my Pumpkin Pie Oatmeal or Pumpkin Pie Smoothie but I wanted to try something new. Since I had to get down to work, it needed to be fast, and I didn’t want to make anything that would leave a ton of leftovers lying around since we’ll be going out of town this weekend. A single serving oatmeal cookie, made in the microwave? Sounded like a good challenge to me.

To add sweetness without needing sugar, I used mashed super ripe banana (applesauce would also work here if you’re not a banana fan) and Almond Breeze vanilla almondmilk. I also added some nut butter (I used cashew butter, but any kind is fine) and ground flaxseed to help bind it together and add some healthy fats.

This recipe is perfect for those afternoons when you want something like a cookie… but that will tide you over for more than 30 seconds. The cookie comes out soft and chewy – kind of like a muffin top!

  • 1 very ripe banana, mashed (or applesauce - 1/4 C)
  • 3 Tbsp. Almond Breeze vanilla almondmilk
  • 3 Tbsp. rolled oats
  • 2 Tbsp. pumpkin (canned is fine)
  • 1 Tbsp. nut butter (any kind)
  • 3 tsp. raisins or other dried fruit
  • 2 tsp. ground flaxseed
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. cinnamon


  1. Combine and mix all ingredients in a lightly greased/cooking sprayed or nonstick microwave safe bowl.
  2. Microwave on high for 4 to 5 minutes.
  3. Let cool and enjoy!

I ate the first half of the cookie plain, then decided to mix it up and threw some cottage cheese on top for protein and some blueberries on the side, too. Also delicious! I loved the spiced flavor the pumpkin pie spice and cinnamon gave to it. Very fall-esque.

    I’ve made microwave “cake” before, but wasn’t really a fan. I think a cookie would work out better, especially a soft style cookie :P

    Hi Anne, just so you know, 3 tsp is the equivalent of 1 tbsp (in the recipe you used 1 T and then 3 t but they are actually the same- not sure if you knew this!). Also, pumpkin pie spice already contains cinnamon, along with nutmeg, cloves, and ginger :) They are just mixed together already for you in normal baking proportions

      I did know 3 tsp was the equivalent of 1 Tbsp, but totally forgot to make that change when I wrote down the recipe since I was using the tsp! And yes, I know PP spice includes all those things – I just wanted to add extra cinnamon cause it rocks. :)

    Did you use the entire banana in your recipe? I did and it turned out way too runny and was a sort of pumpkin pancake, but really mushy. I’m thinking that since the whole banana would not be equivalent to 1/4 cup applesauce that I should have used 1/4 cup mashed banana? BTW I love your blog – I’m doing my dietetic internship right now!

      I did use an entire banana, but it was a smaller banana. Hmm… that’s weird. Maybe you’re right – try a smaller amount or a smaller banana? Thank you for reading – good luck with your internship! :)
