My Favorite Fall Recipes

Hello friends!

I’m currently en route to Texas for my friend Jessica’s wedding, so in the meantime I thought I would share some of my favorite fall recipes with you all! I just rediscovered a few of these I posted last fall — yum!

~ Autumn Chicken Salad ~

A delicious and healthy twist (no mayo here!) on classic chicken salad. Try it with dried cranberries or apples instead of grapes, too!

No butter, no oil, just deliciousness.

~ Pumpkin Bean Dip ~

This is delicious, easy to make, and a huge hit at parties when you want to serve something more creative than hummus!

~ Veggie-tastic Minestrone Soup ~

I love this soup and make it all the time! It’s delicious, nutritious, and super easy to throw together. It’s also a great way to use up extra veggies sitting around in your fridge!

In other news, I wanted to introduce you guys to an amazing non-profit organization, called Teen Fitness International, run by one of my former coworkers!

Teen Fitness International (TFI) aims to fight teenage obesity by making access to health and fitness facilities easier and more desirable for teens and their families. TFI provides 13 to 19 year old U.S. and Canadian teens FREE summer access to a gym in their area between the hours of 9 a.m. and 4 p.m. How great is that? Last summer, an estimated 50,000 teens and their families walked through the doors of nearly 400 North American health clubs as part of TFI’s free summer health club membership program. Now that summer is over, TFI is working diligently to expand their program so that they can open more doors to gyms, mixed martial arts studios, and dance and gymnastics studios in Summer 2011.

It’s an awesome organization for a great cause that I’m clearly very passionate about! I have given their banner a new home on the right sidebar of my blog and I hope you all will help me to spread the word about them to teens and their families.     I have made the sweet potato lentil chili with my twin granddaughters and it was scrumptious. The spiced butternut squash muffins are delish too. Have fun

    Have fun in Texas, Anne! The weather has been great in Dallas - hope the same goes for Houston. I'm totally making your pumpkin bean dip tomorrow for football watching. Yum! :)

    Hi Anne! You're on your way to Texas? Awesome! I live in the big "D." I love your Fall recipes. I've already made the pumpkin cranberry muffin tops. Love them! Next on my list are the butternut squash muffins and the sweet potato lentil chili. Have a fannetastic time and I'll be looking for some Texas pics.
