Recent Eats

Hi guys! Popping in with some recent eats. I meant to publish this post yesterday but time got away from me, as I’ve noticed it does when one has an infant! 🙂 It’s hard to move when this adorable milk drunk cuteness is happening in your lap:

The front of her hair seems to have left the premises and she is now rocking an awesome mullet/party in the back situation. Too cute!

Anyway – on the food front, I’ve been craving lots of veggies lately. On Wednesday last week, I had a fun lunch out with my high school BFF Jenny and her sister Gretchen!

They were going to come over to hang out, but Jenny is getting over a cold so we decided to wait a few more days to introduce her to Riese and instead to have a mom’s outing! We hit up a cute coffee place called Northside Social for an early afternoon hangout sesh– it was 2 p.m. and I hadn’t had lunch yet, though, so I got a salad as well!

Their quinoa and kale salad was really good – I’d never tried it before! Very hearty.

Other eats recently have included the reintroduction my old fave: the grain salad bowl! (Sidenote: check out my grain salad bowl recipes blog post for ideas – great for packed lunches too.) I used to eat these ALL the time but wasn’t feeling them by the end of pregnancy… glad to have them back in the mix!

This one had arugula, beets, broccoli, leftover Christmas turkey, chickpeas, pumpkin seeds, brown rice, and homemade balsamic vinaigrette. It was SO good and really filling.

We’ve also been enjoying leftover Christmas turkey in the form of soup! Matt made us some homemade turkey broth using the turkey carcasses (he just boiled the carcasses in water with onions, carrots, and celery for about 6 hours, then strained it), and then we made soup with more fresh carrots, celery, onions, baby spinach, and leftover turkey. So good and cozy in this cold weather!

Stay warm out there my friends, and have a fun and safe New Year’s Eve! As you can probably guess, we are not partying or doing much of anything for NYE this year. 😉

    I really enjoyed making a shepherds pie with some of our leftover turkey after Thanksgiving. That soup looks delicious! I’m making our ham hock & 13-bean soup for NYE. We’ve ended up making it a bit of a tradition. ? That necklace is so sweet! Have a great weekend & New Year’s!

    Ha my baby’s hair is doing the same thing! It’s getting so long in the back but the front half of his head is bald. Happy New Year!

    My family always makes fun of my turkey soup I make every year with my Thanksgiving turkey carcass but it so good in this cold weather!

    Both of our twins' hair did that, too! We got such a kick out of their horseshoe/George Costanza look especially since they're both girls. She's precious!
