Stuffed Mushrooms and Sweet Potato Fries

I followed the recipe exactly except that I used fresh tomatoes instead of sundried. It was just as delicious. I think next time I will also try reducing the balsamic vinegar that you drizzle on at the end, just to mix things up!

On the side, we had my Mexican-Style Sweet Potato Fries 🙂 Also a huge hit!

Speaking of my recipes, I have some awesome news — reader and fellow blogger MacKenzie has offered to act as a “fANNEtastic intern” of sorts and will be calculating the nutritional stats for ALL of my recipes! You guys have been asking for this daily so I’m really excited to finally be able to give you what you want. Stay tuned — I’ll be sure to re-link to my recipes as the nutritional info gets added to them. 🙂 We’ll be going in order, starting with the Breakfast/Brunch category on my recipe page!

Any recommendations for sites to use to calculate nutritional stats (especially ones that have obscure ingredients like chia seeds and spelt flour)? Or any format preferences (e.g. the little nutrition labels vs. just listing the stats)? Let me know your thoughts, all input is helpful 🙂

Have a great day — I have day 2 of my Food Science & Preparation class tonight and we are learning all about meats and different cooking methods — in particular braising! I’ll be taking lots of photos for you guys 🙂

    I have found the nutritional calculator on www.sparkrecipes.com very helpful. I love the fact that I can add my own foods to the site and it will save in my favorites folder. So if you are using a particular brand of chia seeds and the nutrition information is on the packaging, you can add it to the website.

    Those mushrooms look fabulous!!! I've used The Daily Plate to calculate meal stats...I don't know that it's 100% accurate, but I think it gets pretty darn close! I think the labels are the best format! :)

    Those stuffed mushrooms look so good--and I'm not even a huge mushroom fan. Oh, and I use the USDA Nutrient Database for calculating nutrition facts: http://www.nal.usda.gov/fnic/foodcomp/search/

    The arugula salad was delicious and my daughter and grandkids loved it. Her husband is a meat and potato man. My husband even loved it and that's saying something because he is a meat and potato man too. Mama's changed her way of cooking and they are going to have to learn to like it. I have been french frying sweet potatoes in the oven for a long time. They are terrific and the mushrooms look divine. I am so glad you will be offering nutritional stats.

    wow those look amazing. We have 3 portobello mushrooms in our refrigerator right now. So dinner this week = your recipe! Can't wait :) That is really cool about the nutritional stats on your recipes. I have not looked at many yet but if they are anything like the mushroom I can't wait to try them out.

    I love this website for analysis: http://caloriecount.about.com/cc/recipe_analysis.php You can sign up for a free account and save your recipes, too! Also, you can look up brand name items and certain restaurant items if you want to calculate closely.

    I use the SparkPeople recipe calculator [ http://recipes.sparkpeople.com/recipe-calculator.asp ] and love it. You can add specific nutritional info that isn't on there and save it, or use other member's personally input info too... you'd be surprised by how many other people have manually entered the calories for chia seeds and the like. I love it.

    I am so excited that there will be calorie counts for all of your fANNEtastic recipes coming soon. I am new to your blog, so this is already an upgrade for me. Watch out, I may get spoiled. :) BTW, I was bummed that neither of my local grocery stores are carrying pumpkin now, as they consider it a "seasonal" ingredient. I was all ready to make your whole wheat pumpkin raisin muffins last night. :( My search for pumpkin will continue with Whole Foods and Trader Joe's.

    I unfortunately don't have any sites that you should use, but I do have one that you shouldn't: http://caloriecount.about.com/cc/recipe_analysis.php It's not consistently wrong, but it gets the most random and bizarre things wrong - for instance, 1/2 cup of chickpeas definitely does not contain 300+ calories! On a more positive note - what a gorgeous mushroom recipe!

    I use sparkpeople.com. It's a fantastic website you can use to calculate nutritional facts for recipes, look up calories in certain foods, and track your caloric/nutritional intake. I use it (plus its app) to track my eats for the day (I try to make sure I eat enough). Plus there are ton of great articles and advice about nutrition, fitness, motivation, etc.
