This Week’s Eats + Exercise

Morning guys! I’ve been snacking on leftover Smoked Salmon Vegetable Egg Casserole all week for breakfast – yum! Love having that on hand. It holds up really well in the fridge, too – great make-ahead breakfast recipe! I had it paired with some leftover thyme and garlic roasted potatoes a couple mornings in a row – good combo.

Another day I had it with PB toast and fruit!

For snacks, I’ve been noshing on my Whole Wheat Vegan Carrot Cake Muffins – that recipe is from the reeeeally early days of my blog (but it has since been rephotographed) and they are so yummy. Give them a shot!

I’ve also been enjoying the last of my leftover Berry Lemon Quinoa Breakfast Bake with cottage cheese and some extra seeds. Yum!

On the dinner scene, we had a really good simple seared salmon with corn (with crema + cheese on top – sounded weird but tasted so good) and veggies (via Blue Apron) one night this week.

Another night, I threw together easy Mexican bowls/salads for us. I sauteed some onions and garlic in a little oil, then added the ground meat with some shakes of cumin and chili powder.

When it was cooked through, I layered it in bowls with chopped romaine, brown rice, black beans, chopped tomato, avocado, salsa, and grated cheddar. Really satisfying combo!

I had enough leftover for two lunches – total win. 🙂

On the fitness front, I made it out to a boot camp class on Tuesday morning with the girls! At almost 9 months postpartum I’m just now feeling good enough to do most ab exercises again. I’m still modifying some really hard ab stuff, but I was able to comfortably do the below move again. I have been really cautious with ab work given the C section and wanting to make sure that my body was healed enough to have proper form for core work so it was beneficial vs. setting my recovery back! Side plank is still a bit much for me, but I’m getting there!

I also made it to two early a.m. yoga classes this week. Still loving the yoga – feels so nice and calming!

    I need to make a big batch of egg/breakfast casserole again to have on hand throughout the week! I haven't done that in awhile. My favorite thing I ate was a pecan breaded/crusted fried chicken breast on top of a huge salad with dried cherries, roasted pecans, spring mix, and feta when I went out to eat earlier this week. Delicious!
