Hey friends! I’m glad many of you liked the look of my Sheet Pan Asian Salmon with Veggies – give it a shot this weekend and let me know how it goes! So easy, fast, and yummy!

It has been a reeeeeally busy week over here – I’m happy it’s Friday! No workout today – I was in need of a day off and a long night’s rest after burning the candle at both ends a bit this week. I literally went to bed at 8:45 last night and fell asleep immediately – it was awesome.

It’s no wonder I was tired because I had a really awesome and speedy track workout yesterday morning!

We had a shorter and faster day on the agenda. After warming up, we started with a 1600 (1 mile) at threshold pace, then (after a couple minutes rest) an 800 at threshold pace. Then we moved into 400’s (one lap) – hard and fast with a short 1-2 minute recovery in between. We did 4 of them and I was proud I did a really good job with pacing – it’s hard not to start too fast and tank (both during the lap, but also over the series of the 4 laps too). I got 1 second faster for each of them and then 5 seconds faster for the last one. Yay! The watch above just includes the workout – not my warm up jog and cool down jog.

Thanks to the warm weather I was in the mood for a smoothie when I got home from the track so I whipped up a variation on my Banana Spinach Smoothie (<—recipe).

I followed the recipe (except I used almond milk and added Kura vanilla protein powder), and also added half an avocado for some healthy fat. Avocado in smoothies is so good – try it! Makes it really creamy and you can’t taste it.

I’d forgotten how good smoothies are – hadn’t had one in a little while! If you love smoothies, here are a few of my other favorites to try:

As for dinner last night, Matt whipped up a quick meal for me and his mom, who is in town for the second half of a two part DC-based workshop and staying with us for the weekend. On the menu: salads + a simple pasta with marinara sauce! The sauce had green pepper, and onion and some ground turkey in it. And the pasta was black bean pasta, which was a fun way to mix it up!

And now it’s time to get back to my to do list! Have a fabulous day and a great weekend, my friends! Also – I can’t believe we only have a few more days left of this year’s Winter Shape Up. Thank you so much to all of you who participated – and don’t forget you have a few more days to comment on the week 4 meal plan and week 4 workout page to enter to win prizes!

One last HUGE thank you to the sponsors who made it possible to offer this challenge to you guys for free. Please show them some love! :)

What’s your favorite smoothie recipe?

If you participated in the Winter Shape Up this year, what was your favorite recipe from the meal plan? :)

  1. 1

I love smoothies in the summer, which is like 9 months out of the year in AZ so I drink them a lot. Surprisingly I haven’t gotten around to doing the avocado thing yet, soon though!

  2. 3

Wow, that was a FAST track workout, lady!! Good work!!

  3. 4

I love using coconut milk (instead of almond) in smoothies for that little touch of sweet. what kind of blender do you use? would you recommend it?

  4. 6

Your healthy Shamrock Shake is one of my all time favs.

  5. 8

Mmm, I love smoothies! I’ve been loving all of the smoothie recipes in the latest ohsheglows cookbook – there’s one with matcha in there that is especially good!

  6. 10

Smoothies are one of my favorite things, mostly because they hit the “I want a milkshake/ice cream” craving head on, and I can pack them with nutrition while I’m satisfying it. I’ve been using almond milk, peanut butter, frozen bananas, and chocolate protein powder with some super greens powder for extra oomph! Tastes like a chocolate-PB milkshake and who doesn’t want to have one of those for breakfast?

  7. 12

I tried your Sheet pan Salmon and Veggies last night for dinner and it was so delicious and easy! It was perfect for a quick week night dinner since it really only involved chopping up the veggies and making the sauce. Also, the fresh ginger is so tasty! Thanks for this keeper!

  8. 14

Been loving smoothies lately! I make them with whole milk yogurt for my one year old who hates regular milk but loves yogurt, so it’s a great way to get fruits, veggies, dairy and protein all in one :)

  9. 15

Have a great weekend! :D My favorite smoothie combo is spinach, frozen banana, frozen strawberries, peanut butter, cinnamon, and almond milk!

I hope you had an amazing week! x
