Whether you or someone in your family is gluten free, or you’re just looking to mix up your meal options, these easy gluten free meals are sure to please!

From tacos to stuffed peppers to stir fries, there’s something tasty here for everyone.

Tasty Gluten Free Dinner Recipes

Gluten free does not have to mean boring!

All of these meals are both filling and packed with flavor, and there are lots of options to choose from, including Mediterranean, Mexican, Thai, and more.

Without further ado, let’s get to the recipes!

Mediterranean Stuffed Peppers with Chicken

If you’re a fan of Mediterranean flavors like I am, you’ll love these stuffed peppers!

Rotisserie chicken, salty feta, kalamata olives, chickpeas, quinoa, and more make up the delicious filling inside these soft roasted peppers. Dinner perfection!

Stuffed peppers are one of my absolute favorite easy dinners. They just feel fancy for some reason! 

Jackfruit Carnitas Tacos

Even meat lovers will love these jackfruit tacos. You’ll be shocked how much they taste like carnitas!

Just be sure to use corn tortillas to keep this recipe gluten free.

Goat Cheese Veggie Frittata

When in doubt (or low on time), a frittata makes the perfect gluten free meal. Toss in some veggies and creamy goat cheese, and you’ve got yourself a tasty breakfast, lunch, or dinner.

Just swap the toast for a gluten free bread, or have roasted potatoes on the side instead!

Instant Pot Stuffed Peppers

If you’re looking for an Italian-inspired stuffed peppers recipe, you’ve come to the right place.

These roasted peppers are stuffed with ground turkey, beans, veggies, spices, and brown rice then topped with melty cheese. It’s a perfect weeknight meal!

Garlic Sheet Pan Chicken and Veggies

This sheet pan chicken dinner is easy to make and great for meal prep! Just toss in your favorite veggies, roast, then serve with quinoa or brown rice for a complete dinner everyone will love.

Peanut Sauce Stir Fry with Shrimp

If you’re craving a comforting meal, this shrimp stir fry with creamy peanut sauce is where it’s at. It’s packed with veggies and served with brown rice noodles for extra staying power.

Rice would be delicious here, too – either way, it’s a winner!

Just be sure to use a gluten free soy sauce (like tamari) in the sauce to keep this recipe gluten free. 

Lemon Dijon Sheet Pan Salmon Dinner

This super easy sheet pan salmon features a tasty lemon dijon sauce, roasted veggies, and a side of quinoa (or whatever grain you have on hand).

Cleanup is a cinch and you’ll have dinner on the table in just 35 minutes, most of which is totally hands off time!

Instant Pot Lentil Vegan Bolognese with Spaghetti Squash

This vegan lentil bolognese is such comforting dish for cold weather, and cooking it in the Instant Pot makes it quick and easy! Even the spaghetti squash goes into the pot to make things extra simple.

Healthy Chicken Enchiladas

These cozy, cheesy chicken enchiladas swap Greek yogurt for sour cream, for a lighter (but just as delicious) version of the classic Tex-Mex dish.

Be sure to use corn tortillas to keep this recipe gluten free!

Watermelon Chicken with Balsamic Glaze

This grilled chicken is coated in the tastiest watermelon balsamic glaze. Just serve with your favorite sides!

I love it with grilled zucchini, rice, and a side salad with cucumber, watermelon, and feta (pictured above).

Orange Glazed Salmon with Honey & Ginger

This easy roasted salmon is topped with an orange, ginger, and honey glaze for a super flavorful, healthy dish. 

Sesame Ginger Ground Turkey Lettuce Wraps

These ground turkey lettuce wraps feature a delicious sesame and ginger sauce for a quick and easy gluten free dinner! Serve on their own, or add rice if desired.

Again, just be sure to use gluten free soy sauce (like tamari) when making the sauce to keep this recipe gluten free. 

Stuffed Portobello Mushrooms with Feta

These portobello mushrooms are stuffed with all the best things: feta, white beans, spinach, artichokes, sun dried tomatoes, and even more goodness.

So tasty, and they go great with practically any side dish: roasted veggies, quinoa, a side salad, the list goes on!

They also make a great appetizer!

Baked Pesto Salmon & Veggies

This baked pesto salmon is flavorful, quick, and so satisfying. It’s even faster if you use pre-made pesto, but you can easily make your own too!

Grilled Pork Tenderloin Tacos with Salsa Verde

These pork tacos are always a hit, and the homemade salsa verde elevates them even more! I love serving them with radish slices, lime, and fresh cilantro.

Just be sure to use corn tortillas to keep the meal gluten free. 

Grilled Italian Sausage & Veggie Foil Packets

These grilled foil packets couldn’t be easier!

Just chop up some veggies and pre-cooked sausage, throw in some baby potatoes, drizzle with oil & seasoning, fold up the foil and toss on the grill.

And voila! Dinner is served. 

Turkey Dijon Meatloaf Muffins

We’re switching up standard meatloaf with this dish, replacing it with a delicious ground turkey dijon combination instead! Cooking it in muffin form saves time and makes serving easier, too.

This recipe stays gluten free thanks to the use of oats as a binder instead of flour. Just be sure to buy gluten free certified oats if necessary; oats are gluten free but can often be contaminated in processing. 

Soup Recipes

When talking about gluten free meals, of course I wanted to include some yummy soup recipes! Here are some of my favorites.

Thai Curry with Sweet Potatoes

Warm Thai spices make this sweet potato curry the most comforting dish ever! This recipe happens to be vegan, too.

Crockpot Turkey Chili

Let your slow cooker do most of the work with this easy turkey chili! The perfect meal to warm you up on cool fall/winter days.

I always love a big bowl of chili and this recipe never disappoints. 

Instant Pot Vegetable Soup

I love how versatile this veggie soup is. Just toss in all the veggies you have on hand, and you’ve got yourself a tasty meal!

It cooks super quickly in the Instant Pot, too.

I’m always craving this creamy chicken tortilla soup! Serve with sliced avocado, sour cream, a squeeze of lime juice, and crushed corn tortillas.

Slow Cooker Moroccan Chicken Stew

Looking to switch things up? This Moroccan chicken stew features bold flavors that go amazingly well together. Plus, it’s easy to make in the crockpot.

Enjoy it with rice or quinoa (not the pictured couscous, which contains gluten).

    I don’t have any issues with gluten but these all look good in their own right! I make the salmon with mustard dill sauce quite often.

    Hello Anna, I am a big fan of your gluten-free recipes. Tried some of them at my home and my husband loves them a lot though he is not a big loved of gluten-free foods. Anyways, I have a question. Yesterday I went to a grocery shop near to my house. And noticed a product labeled as Non-Gluten. Is there any difference between non gluten and gluten-free products? Thanks. Isabella.

      Thanks Isabella, glad to hear it! That's interesting about the "non-gluten" label. I have not seen that before! I'm guessing it means the same thing as gluten free, but I'm not sure as I haven't seen it in action. Seems confusing!
