Gearing up for the Holidays!

Morning guys! We’re gearing up for the holiday fun over here – see the end of this post for some holiday recipe ideas!

It’s a Flour Free Breakfast Pancake (<- recipe) sort of morning, don’t you think?

Always hits the spot, especially after a sweaty workout! I hit up Urban Athletic Club via ClassPass this morning for one last pre-holiday serious sweat session.

I’m planning to run over the break, but wasn’t sure I’d be doing any boot camps – felt good to get it in. It was a tough one today – Kathleen and I were seriously struggling by those push ups at the end! But we saved enough energy to do some extra jump roping for video purposes, obviously. Check the fun video out over on Instagram. Next time: double dutch. 😉

In other news, I made a tasty lunch yesterday that I thought was worth sharing in case you guys want to recreate it!

This was super fast and easy to make and would make a great dinner, too. In a bowl, I threw some greens (arugula), 90 second brown rice, avocado, cilantro, peppers, and leftover string beans. Then I topped it with some chili lime shrimp, which was just shrimp pan seared in a little oil with some chili lime seasoning! My friends at McCormick sent me a fun spice pack (chili lime + shawarma seasoning + turkish seasoning) as a Christmas gift and I was excited to bust it out!

So easy and really good! No dressing necessary – just a little Cholula chili garlic hot sauce (the best). 🙂

And now, back to watching the rain fall. Weirdest December weather ever… so warm and humid!

I’m working from home this morning and then looking forward to taking the rest of the week off! I might pop back in to say hi, but in case I don’t, Merry Christmas/happy holidays, my friends! I’m thankful for you. 🙂

We’re sticking around DC for the holidays and have a fun Christmas Eve feast planned with family. I’m in charge of salad (I’m thinking a massaged kale salad is in order… any recipe faves?) and veggies (string beans?), my brother is doing the mashed potatoes, my mom is roasting a turkey, and Matt is frying a turkey (we just bought this cool oil-less turkey fryer – we’ll see how it works!). Other relatives are in charge of drinks and dessert!

    Kale salad is a holiday favorite in our household! I massage in a lemon-tahini dressing (1 part lemon juice to one part tahini with a sprinkle of salt) and toss with sliced grape tomatoes and chopped red onion. The best. The weather is seriously out of control - I ran in shorts and a sports bra today and still came back warm. What the heck!

      Er, uh, make that two parts tahini and one part lemon juice. I've been on vacation from work for a week and my mind has rotted away already.

    Our weather is wierd too... No snow and supposed to be 13 (Celsius)tomorrow - crazy. I dislike it! String beans are a personal fav, good choice! Merry Christmas!

    I've done this recipe: http://pinchofyum.com/winter-rainbow-quinoa-salad with kale (massaged with a pomegranate dressing, but I'm sure a simple balsamic would be great) instead of spinach, and it's delicious both ways! Have a wonderful Christmas!

    That salad looks amazing! I had to work Monday & Tuesday, but am off starting today until 1/4 and I'm so excited! Finally finished all of my shopping today (Pentagon City was a madhouse!) and am looking forward to relaxing with Christmas movies and my loved ones. Enjoy your holiday!

    our friend made a turkey in that infrared fryer for Friendsgiving and it cooked SO well! I don't enjoy the taste of turkey, but it was so moist and juicy! Really perfect!

    I have made this kale salad a lot and it is always a huge hit! http://ohsheglows.com/2013/11/25/the-best-shredded-kale-salad/ I add a little agave/honey to the dressing so it isn't quite as tart. I've made it the way it's written, or in the summer I use fresh strawberries instead of craisins. Recently I added some cooked red quinoa, shaved brussels, and pomegranate arils and it was awesome. Whatever you do, don't skip the pecan topping- it is AMAZING. Happy holidays to you and your family Anne!
