10 Healthy Oatmeal Desserts & Snacks

I love adding oats to my desserts and snacks. In addition to having a really nice chewy texture, they also add fiber and staying power to the mix. Here are my favorite healthy oatmeal desserts and snacks, all rounded up together for you to enjoy!

Healthy Desserts with Oats

Cookies with oats are classic (and I definitely included some tasty options here!), but oats can also be delicious in less expected sweets, like ice cream (!) and lemon bars.

Let’s get into these sweet, healthy treats.

No Bake Lemon Bars (Vegan & Gluten Free)

These creamy coconut lemon bars have a luxurious cheesecake texture and don’t require any baking!

They’re dairy free (thanks to the creamy coconut milk!), with a gluten-free crust featuring nuts, dates, and oats.

Peanut Butter Oatmeal Power Cookies

These are the perfect healthy cookies to get you through that afternoon energy slump – they have been a favorite of mine for years! 

They’re packed with peanut buttery flavor and nutritious ingredients like oats, raisins, almond flour, and ground flaxseed. Plus, they’re naturally sweetened with maple syrup.

Zucchini Bread Ice Cream (Dairy Free)

This summery treat combines ice cream (made with almond milk and coconut milk) and zucchini bread flavors for a unique dessert that’ll cool you down all summer long!

It’s packed with texture and flavor from the zucchini, walnuts, chocolate chips, and more goodness.

I know it sounds kind of weird, but give it a try!

Banana Oatmeal Pumpkin Cookies (Vegan)

Ripe bananas and maple syrup add a light sweetness to these wholesome pumpkin oatmeal cookies!

They’re made with fiber filled oats and whole wheat pastry flour, and packed with Vitamin A from the pumpkin. Plus, you get bursts of sweet and tart flavor from the dried cranberries!

Peanut Butter Oat Bliss Balls

Looking for a quick and filling snack that’s easy to make ahead?

These peanut butter bliss balls have a delicious peanut buttery flavor, with sweetness from the honey and staying power from the oats and chia seeds. Dried cranberries add a hint of fruity flavor, too!

Coconut Banana Oatmeal Cookies

I love the combination of flaked coconut and sweet banana in these cookies! Not to mention the flavor pop from the raisins and the texture from the oats.

It’s a fabulous combination for a sweet, healthy cookie that can be eaten as a breakfast, dessert, or afternoon snack!

Oatmeal Chocolate Chip Cookies with Chickpea Flour (Gluten Free)

Melty pools of chocolate and chewy oats come together in these gluten free chocolate chip cookies (made with chickpea flour!). They also feature goodies like chopped walnuts, Greek yogurt, and ripe banana.

If you aren’t a chocolate fan, you can easily replace the chocolate chips with raisins or another dried fruit!

Homemade Protein Granola Bars with Oats

These homemade granola bars are packed full of nutritious ingredients – the perfect snack to keep you satisfied throughout the day.

They’re crunchy and nutty, with added flavor from the dried apricots (or other dried fruit), dark chocolate chips, and shredded coconut.

Apple Oat Bars with Cinnamon

These apple cinnamon oatmeal bars are a crave-worthy treat inspired by fall flavors. They are actually one of the first recipes I shared on the blog!

They taste a lot like apple crisp, but in easily portable bar form. Great for when you’re on the go!

Blueberry Oatmeal Power Bites

These blueberry oatmeal power bites are the perfect snack or breakfast for a boost of energy! Bursting with juicy blueberries, crunchy walnuts, and creamy almond butter, they’re totally crave-worthy and super nutritious.

Plus, they’re sweetened with ripe banana and maple syrup and have a hidden veggie no one will notice. 🙂

    I used to make oatmeal bars with a date filling - must dig out that recipe! But yours all look good, too. Those coconut lemon bars get my summertime vote!
