17 Tasty Summer Treats & Healthy Snacks

Summer is upon us, and it’s bringing the heat! To keep you cool (and nourished!), here are some of my favorite summer treats and healthy snacks.

From popsicles to no-bake bars to smoothies & shakes, these recipes are refreshing, nutritious, and tasty. (Everything you’d want in an afternoon snack!)

Tasty Treats + Healthy Summer Snacks

Many of my favorite easy summer snacks involve fruit, but I’ve also included a couple savory snacks too, to keep things interesting!

A few of these recipes require baking, but most are no-bake. Perfect for hot days when you want to avoid turning on your oven. 🙂

1. Watermelon Mojito Sorbet

This watermelon mojito sorbet is vacation in a bowl: a frozen, hydrating treat that’ll keep you cool on a hot day.

2. Cheesy Pizza Granola Bars

If you’re more of a savory snacker, these pizza bars will be your new favorite snack recipe. They’re crunchy, cheesy, and easy to make!

3. Mango Chia Pudding

Sweet, juicy mango always reminds me of summer, and is the perfect healthy snack for a hot summer day! There’s no cooking required, just prep the chia pudding ahead of time and add extra fruit when you’re ready to enjoy.

I love this paired with strawberries and flaked coconut, but you can use any fruit you like! Plus, it’s made with coconut milk, so it’s dairy free, vegan, and super creamy.

4. Mango Spirulina Smoothie

This green fruit smoothie recipe with spirulina powder is packed with nutrients AND tropical flavor! Mango, spinach, banana, and more deliciousness gets blended into a creamy and refreshing smoothie that’s perfect for summer.

5. No Bake Vegan Lemon Bars

These unique lemon bars are absolutely delicious and don’t require any baking! They’re made with an oat crust – so they’re gluten free – and coconut cream keeps them dairy free, too.

They’re lower in sugar and have a luscious cheesecake texture. What’s not to love?!

6. Mango Habanero Salsa

Need a little extra spice in your life? This mango salsa with habanero peppers packs a sweet heat that’s perfect for summer.

Enjoy it as a dip with tortilla chips or your favorite crackers. (Psst: it’s also delicious on fish tacos, like these blackened salmon tacos!).

7. Watermelon Rind Smoothie

This frosty smoothie is the epitome of summer in a glass! With peaches, strawberries, watermelon, banana, fresh mint, and more, it’s the ideal smoothie to cool you down on a hot day.

Frozen watermelon rind makes it extra refreshing, plus it reduces waste by using more of the watermelon.

8. Dairy & Gluten-Free Peach Muffins

One of my favorite summer fruits: peaches. They’re so juicy and sweet, and they’re delectable in these gluten free muffins! A perfect portable breakfast or snack.

9. Lemon Avocado Hummus

This lemon avocado hummus goes great with crunchy veggies, crackers, or as a spread on a sandwich. Plus, it’s super quick to whip up a batch!

10. Watermelon Rosemary Popsicles

Is there anything more quintessentially summer than popsicles?? I especially love these watermelon rosemary popsicles with lime. The flavors are unique, and they’re so refreshing!

11. No-Bake Blueberry Custard Pie (Vegan + Gluten Free)

This blueberry custard pie doesn’t require any baking, and it happens to be vegan and gluten free, too. The creamy custard layer and bright blueberries pair deliciously with the no-bake crust made with dates, nuts, and coconut!

12. Mix & Match Healthy Smoothies

I love how versatile smoothies are. You can use whatever you have on hand – fruits, veggies, nut butter, etc. You really can’t go wrong! Check out the post above for lots of smoothie flavor inspiration.

13. Nectarine Ice Pops

These nectarine ice pops are the epitome of summer. The recipe uses honey or maple syrup for natural sweetness, and you can always add berries for even more flavor!

14. No-Bake Peanut Butter Granola Bars

Who could pass up peanut butter granola bars that take just 5 minutes to make (and no baking whatsoever)?! This is one of my favorite go-to snacks to have on hand – and one of my most popular blog recipes of all time!

15. Fruit Salad with Yogurt Honey-Lime Dressing

Another summer staple: fruit salad. But this isn’t your standard fruit salad – the yogurt honey lime dressing kicks it up several notches. 🙂

16. Cherry Pie Snack Bites

Enjoy a no bake version of cherry pie for a lot less work with these cherry pie snack bites! They’re both tart and sweet, and super portable.

17. Baked Oatmeal Apricot Snack Bars

I love oatmeal bars. They’re an easy-to-make, filling snack. And these apricot snack bars just scream summer!
