Tasty Summer Treats & Healthy Snacks

Summer is upon us, and it’s bringing the heat! To keep you cool (and nourished!), here are some of my favorite summer treats and healthy snacks.

From popsicles to no-bake bars to smoothies & shakes, these recipes are refreshing, nutritious, and tasty. (Everything you’d want in an afternoon snack!)

Tasty Treats + Healthy Snacks for Summer

A few of these recipes require baking, but most are no-bake. Perfect for hot days when you want to avoid turning on your oven!

1. Watermelon Rosemary Popsicles

Is there anything more quintessentially summer than popsicles?? I especially love these watermelon rosemary popsicles with lime. The flavors are unique, and they’re so refreshing!

2. No-Bake Blueberry Custard Pie (Vegan + Gluten Free)

This blueberry custard pie doesn’t require any baking, and it’s perfect for Fourth of July. I mean, just look at those colors! It’s ridiculously tasty, too. 🙂

3. Mix & Match Healthy Smoothies

I love how versatile smoothies are. You can use whatever you have on hand – fruits, veggies, nut butter, etc. You really can’t go wrong! Check out the post above for lots of smoothie flavor inspiration.

4. Dairy & Gluten-Free Peach Muffins

One of my favorite summer fruits: peaches. They’re so juicy and sweet, and they’re delectable in these gluten free muffins! A perfect portable breakfast or snack.

5. Lemon Avocado Hummus

This lemon avocado hummus goes great with crunchy veggies, crackers, or as a spread on a sandwich. Plus, it’s super quick to whip up a batch!

6. Fourth of July Healthy Cookie Cake

This healthy cookie cake might be perfect for Fourth of July, but don’t let that stop you from making it another time! Cut yourself a slice, kick back, and enjoy the sunshine.

7. Baked Oatmeal Apricot Snack Bars

I love oatmeal bars. They’re an easy-to-make, filling snack. And these apricot snack bars just scream summer!

8. Nectarine Ice Pops

These nectarine ice pops are the epitome of summer. The recipe uses maple syrup for natural sweetness, and you can always add berries for even more flavor!

9. No-Bake Peanut Butter Granola Bars

Who could pass up peanut butter granola bars that take just 5 minutes to make (and no baking whatsoever)?! This is one of my favorite go-to snacks to have on hand – and one of my most popular blog recipes of all time! 

10. Fruit Salad with Yogurt Honey-Lime Dressing

Another summer staple: fruit salad. But this isn’t your standard fruit salad – the yogurt honey lime dressing kicks it up several notches. 🙂

11. Cherry Pie Snack Bites

Enjoy a no bake version of cherry pie for a lot less work with these cherry pie snack bites! They’re both tart and sweet, and super portable.

12. Watermelon Mojito Sorbet

This watermelon mojito sorbet is vacation in a bowl: a frozen, hydrating treat that’ll keep you cool on a hot day.

13. Cheesy Pizza Granola Bars

If you’re more of a savory snacker, these pizza bars will be your new jam. They’re crunchy, cheesy, and easy to make!

14. Healthy Shamrock Shake

Shamrock shakes can be eaten year round, in my opinion! The secret ingredient in this healthier, refreshing version of the shamrock shake? Avocado! It might sound a little weird, but I promise it’s delicious.
