Need some recipe ideas for the upcoming Thanksgiving feast? Here are my favorite easy and healthy Thanksgiving recipes, sorted into appetizers, side dishes, and a dessert. Enjoy! 🙂

Appetizers

Baked Stuffed Baby Bella Mushrooms

These are delicious — always a favorite! The spinach adds a healthy dose of nutrients while the cheese ensures they are decadent enough that everyone will love them!

Cranberry Cinnamon Apple Baked Brie

Okay, so this one’s not exactly healthy… but it’s really delicious 🙂

~ ~

Pumpkin Bean Dip

An old favorite. All you need is 5 minutes and a food processor!

Side Dishes

~ ~

Spiced Mashed Sweet Potatoes

My favorite Thanksgiving side dish. Packed with flavor, not sugar.

Healthy Mashed Potatoes

These taste (and look) like normal mashed potatoes, but the nutrition is amped up with mashed cauliflower and cannellini beans. They’re vegan, too!

Lemon Garlic String Beans

Delicious and ready in minutes.

Roasted Brussels Sprouts

This roasting method will also work for parsnips, potatoes, broccoli, carrots, etc. — so go wild with the veggies!

Barley & Brown Rice Herbed Salad

A flavorful, colorful, and nutritious side dish.

Goat Cheese and Beet Salad

Canned beets make this super simple to prepare, and your guests won’t even know the difference!

Dessert

~ ~

Sweet Potato Whole Wheat Bread Pudding

So good no one will know it’s whole wheat and made without oil or butter! Prefer pumpkin? This recipe will work great with canned pumpkin, too!

Oh my gosh, I have weirdly been CRAVING bread pudding for months! Unfortunately, a month ago, I found out i'm intolerant to gluten... Which means I'll just have to figure out how to make it myself... Christmas break project! Haha so much more fun than studying.

For the longest time I didn't know how to make brussel sprouts so I never ate them convinced they were probably gross anyway. But ever since I learned, I'm obsessed and eat them at least twice a week!

Ooooh! Mushrooms are my favorite. Funny thing is, I can't bring myself to eat them raw. I sure can devour them when cooked!

Mushrooms and Barley and Brown Rice Salad looks really goo. I'm the only one in my family that loves mushrooms, can you believe that. That's ok, this will be a dish for me only.

I have tried to cook brussels sprouts for my family for holiday meals for the last few years, and everyone eats them, then later claims they hate them. Grrrrrr.

Every single one of these recipes looks absolutely delicious, not to mention healthy and nutritious. Although I'm relatively new to following your blog, I feel that it is worthy of blogging awards...more so than blogs such as Kath Eats, Daily Garnish and Eat Live Run for the content first and foremost, but, in addition, your photos are stunning. I look forward to your posts...and especially this one. Great job!
